For me the first day of fall is not a date on the calendar. Instead, it is when my mom announces "Your aunt and I are making relish this week!" For several years now Mom and her sister, Lois, spend 3 autumn days preparing and canning pint after pint of Green Tomato Relish. Planning begins weeks before. Will there be enough green tomatoes? Does the local farmer's market still have red peppers? Canning lids are bought and jars are sterilized. Even though a food processor is used with the onions and cabbage, Mom relies on her cast iron food grinder to achieve the right "relish texture" with the green tomatoes and peppers.
Ingredients:
4 c. ground onions
4 c. cabbage
4 c. ground green tomatoes (10 -12)
6 sweet red peppers
1/2 c. Salt
6 c. sugar
1 Tbs. celery seed
2 Tbs. mustard seed
1 1/2 tsp. tumeric
4 c. cider vinegar
2 c. water
Preparation:
Grind vegetables with course blade (food processor/kitchen grinder) and mix together in a large roaster pan. Sprinkle with 1/2 c. salt. Let set overnight at room temperature. Drain, rinse and place ground vegetables in a large stock pot. Combine remaining ingredients and pour over vegetables. Heat to boiling. Reduce and simmer for 3 minutes. Seal in hot canning jars. Process for 15 minutes.
