Corn Bread Meatloaf

I know. It's just another recipe for meatloaf. Ho-hum.  However, this one has a nice little kick thanks to the addition of horseradish and the cornbread crumbs keep it moist and a bit sweet. Don't be too quick to play the "ho-hum card"!  :)

Ingredients:
2 pounds ground beef

2 cups cornbread crumbs

3/4 cup minced onion

1/4 cup chopped green bell pepper
2 eggs

2 tablespoons horseradish
1 tablespoon salt

1/4 cup milk
1/4 cup catsup or thick tomato puree'

1 teaspoon dry mustard

Preparation:
Mix all of the ingredients together and form into a loaf. 

Spread additional catsup on top and bake at 400 degrees for 45 minutes.
